Colours in Chicken Tikka Survey 2002
This survey focused on the levels of colouring matter found within chicken tikka masala, and in particular the levels associated with the sauce and the meat.
A detailed pro-forma recorded details of preparation, source of colouring matter and associated instructions for use. In addition, the level of colour was also determined in the pilau rice component of the meal.
All samples were collected from restaurant or take-away outlets.
